I first made this Monster Energy Root Beer Muffin Loaf for a game night with friends, and it was a surprise hit: energizing, nostalgic, and perfect for sharing in thick slices.
Ingredients
- Monster Energy: 1 cup (240 ml), Original or Sugar-Free
- Root beer: 1/2 cup (120 ml), not diet
- Unsalted butter: 1/2 cup (115 g), melted and cooled
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- All-purpose flour: 2 cups (250 g)
- Granulated sugar: 3/4 cup (150 g)
- Baking powder: 1 tablespoon
- Baking soda: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Mini chocolate chips or chopped pecans: 1/2 cup (90 g), optional
Instructions
- Prep the Pan:
- Preheat oven to 350°F (175°C). Grease and line a 9x5-inch (23x13 cm) loaf pan with parchment paper.
- Mix Wet Ingredients:
- In a large mixing bowl, whisk together Monster Energy, root beer, melted butter, eggs, and vanilla until smooth.
- Combine Dry Ingredients:
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Make Batter:
- Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
- Add-Ins:
- Gently fold in chocolate chips or pecans, if using.
- Bake:
- Pour batter into prepared loaf pan and smooth the top. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool:
- Allow loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
