01 - In a clean glass jar, dissolve organic cane sugar in filtered water. Add water kefir grains or ginger bug and fresh lemon juice. Stir gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Allow to ferment at room temperature (68–77°F) for 24–48 hours, until lightly sparkling and tangy.
03 - Strain out kefir grains or ginger bug. Discard or reserve for future batches.
04 - In a pitcher, blend the fermented soda base with orange juice, lime juice, and mint leaves. Stir gently to combine.
05 - Fill glasses with ice cubes. Pour mocktail mixture into glasses. Garnish each with an orange slice and additional mint if desired. Serve immediately to retain optimal effervescence.
