Festive layered salad jar with chicken, crisp veggies, cranberries, feta, and a creamy dressing.
# Components:
→ Chicken
01 - 2 cups cooked chicken breast, chopped (approximately 2 medium breasts)
→ Vegetables
02 - 2 cups romaine lettuce, chopped
03 - 1 cup red cabbage, finely shredded
04 - 1 cup cucumber, diced
05 - 1 cup cherry tomatoes, halved
06 - 1/2 cup red bell pepper, diced
→ Fruits & Nuts
07 - 1/3 cup dried cranberries
08 - 1/4 cup toasted pecans or walnuts, chopped
→ Cheese
09 - 1/3 cup feta cheese, crumbled
→ Dressing
10 - 1/3 cup plain Greek yogurt
11 - 2 tablespoons mayonnaise
12 - 1 1/2 tablespoons apple cider vinegar
13 - 1 tablespoon honey
14 - 1/2 teaspoon Dijon mustard
15 - Salt and pepper, to taste
# Method:
01 - Whisk Greek yogurt, mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper in a small bowl until smooth.
02 - Divide the dressing evenly among 4 large mason jars (quart size).
03 - In each jar, layer cucumber, cherry tomatoes, red bell pepper, red cabbage, chicken, dried cranberries, feta cheese, pecans or walnuts, and top with romaine lettuce in that order.
04 - Seal the jars tightly and refrigerate until serving time.
05 - Shake the jar well before opening or pour contents into a bowl and toss to combine.
