02 - Combine chopped mushrooms with olive oil, sea salt, and black pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, stirring halfway, until golden and crispy. Set aside.
03 - Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery. Sauté for 5–7 minutes until vegetables are softened.
04 - Add minced garlic, dried basil, oregano, and crushed red pepper flakes if using. Cook for 1 minute until fragrant.
05 - Stir in tomato paste and cook for 1 additional minute.
06 - Pour in crushed tomatoes, vegetable broth, and add the bay leaf. Bring the mixture to a gentle boil.
07 - Add broken lasagne noodles. Simmer uncovered for 15–18 minutes, stirring occasionally, until noodles are al dente.
08 - Remove bay leaf. Stir in ricotta, Parmesan, and mozzarella cheeses until completely melted and creamy. Season with salt and pepper to taste.
