# Method:
01 - Set oven to 400°F and line a baking sheet with parchment paper or foil.
02 - In a shallow bowl, mix Parmesan, panko breadcrumbs, garlic powder, black pepper, salt, sage, and smoked paprika thoroughly.
03 - Whisk together eggs and milk until fully blended in a separate bowl.
04 - Pat pork chops dry with paper towels. Dip each chop into the egg mixture, then press into the breadcrumb mixture to coat evenly.
05 - Heat 2 tablespoons olive oil in a large ovenproof skillet over medium-high heat. Sear chops 2 to 3 minutes per side until golden brown.
06 - Transfer skillet to the preheated oven or place chops on the prepared baking sheet. Bake for 12 to 15 minutes until internal temperature reaches 145°F.
07 - While chops bake, melt butter with remaining 1 tablespoon olive oil in a sauté pan over medium heat. Add apple slices and cook 5 to 6 minutes, stirring occasionally, until softened and lightly caramelized.
08 - Place pork chops on plates, top with warm apples, and garnish with fresh sage leaves and extra Parmesan if desired. Serve immediately.
