# Method:

01 - Preheat oven to 425°F. Toss cut potatoes with vegetable oil, salt, paprika, and black pepper. Spread evenly on a parchment-lined baking sheet. Bake 25–30 minutes, turning halfway until golden and crisp.
02 - Pat sirloin cubes dry with paper towels to ensure proper searing.
03 - Mix Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, and salt in a large bowl. Add steak cubes and coat thoroughly.
04 - Warm olive oil in a large cast-iron skillet over medium-high heat.
05 - Add steak cubes in a single layer; sear 1–2 minutes per side until well browned and cooked to desired doneness, working in batches if necessary.
06 - Incorporate unsalted butter into the skillet, tossing steak bites until glossy and coated evenly.
07 - Remove from heat, sprinkle with chopped fresh parsley, and serve immediately alongside the crispy fries.
