01 - Place sausage links in a skillet set over medium heat and cook, turning occasionally, until thoroughly browned and cooked through. Remove sausage and set aside.
02 - In the same skillet, add the beaten eggs and cook, stirring gently, until softly scrambled to your preferred consistency. Remove eggs from heat.
03 - Lay each tortilla flat and arrange 1 cooked sausage link, a portion of scrambled eggs, and a generous sprinkle of shredded cheese in the center.
04 - Roll each tortilla tightly around the fillings, folding in the sides to secure if desired. Return seam-side down to the skillet. Toast over medium heat for 2–3 minutes per side, until golden brown and cheese is melted.
05 - Serve roll-ups warm, or wrap individually in foil for a convenient, portable breakfast.
