09 - 3 tbsp unsalted butter, melted
10 - 3.5 oz dark chocolate, chopped
11 - 1/3 cup heavy cream
12 - Sea salt flakes for garnish

→ Mini Lemon Curd Tarts

13 - 1 sheet ready-rolled shortcrust pastry
14 - 3.5 oz lemon curd
15 - 1 tsp powdered sugar for dusting

# Method:

01 - Preheat the oven to 340°F. Grease a 24-cup mini muffin tin thoroughly.
02 - Combine graham cracker crumbs with melted butter. Press about one heaping teaspoon into the base of 8 muffin cups. In a separate bowl, beat softened cream cheese, sugar, egg, and vanilla extract until smooth. Spoon the mixture evenly over the prepared crusts.
03 - Bake the cheesecakes for 12 to 15 minutes until just set. Allow to cool to room temperature before chilling in the refrigerator. Garnish with fresh berries prior to serving.
04 - Combine crushed chocolate sandwich cookies with melted butter and press the mixture firmly into 8 muffin cups to form tart bases. Chill in the refrigerator for 10 minutes to set.
05 - Heat the heavy cream to a simmer, then pour over chopped dark chocolate. Stir gently until a smooth ganache forms. Spoon the ganache evenly into the chilled tart shells.
06 - Refrigerate the chocolate tarts for 30 minutes until the ganache is firm. Finish with a light sprinkle of sea salt flakes.
07 - Cut eight rounds from the shortcrust pastry and press into the remaining muffin tin cups. Prick the bases with a fork to prevent bubbling.
08 - Bake the tart shells for 8 to 10 minutes until golden brown. Remove from oven and allow to cool completely.
09 - Fill each cooled pastry shell with lemon curd. Dust the tops lightly with powdered sugar before serving.
