# Method:

02 - Whisk together the flour, baking powder, and salt in a medium bowl.
03 - Beat egg yolks with 3/4 cup sugar until pale and creamy. Stir in whole milk and vanilla extract.
04 - Gently fold the flour mixture into the egg yolk mixture until just combined.
05 - Beat the egg whites until soft peaks form. Gradually add remaining 1/4 cup sugar, continuing to beat until stiff peaks form.
06 - Carefully fold the egg whites into the batter in thirds to maintain airiness.
07 - Pour batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
08 - Cool cake for 15 minutes, then pierce the surface all over with a fork or skewer.
09 - Whisk together evaporated milk, sweetened condensed milk, whole milk, horchata, and ground cinnamon.
