- Preheat oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper.
- In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat softened butter and sugar with a mixer for about 3 minutes until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Mix in half of the dry mixture, followed by the cherry soda and sour cream. Add the remaining dry ingredients and stir just until combined. Avoid overmixing.
- Gently fold the chopped maraschino cherries into the batter.
- Combine crushed vanilla sandwich cookies with melted butter in a small bowl.
- Pour half the batter into the loaf pan. Sprinkle half of the cookie crunch evenly over the batter. Top with remaining batter and finish with the rest of the cookie mixture.
- Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. If the top browns quickly, loosely tent with aluminum foil.
- Allow loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk powdered sugar and cherry soda until smooth. Drizzle over the fully cooled loaf before serving.
