# Method:

01 - Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery; cook for 5 minutes until softened.

07 - Stir in baby spinach and cook until wilted, about 1 minute.
08 - Taste and adjust seasoning with salt and pepper as needed.
